Chicken-Stuffed Matzo Balls Recipe For Passover Or Anytime

This recipe from Colavita has a new take on matzo balls and chicken soup.

The matzo (matzoh) balls are stuffed with chicken meatballs!

Plus, this is a healthier chicken soup. Extra virgin olive oil replaces the chicken fat (schmaltz).

This recipe is only for the stuffed matzo balls. Use your own favorite chicken soup recipe or our classic Jewish chicken soup. See more chicken soup recipes below.

Also, you don’t need chicken soup to enjoy these stuffed matzoh balls. You can put them in other soups, stews, atop grains, on a plate as a side, or atop a salad—green salad, even chicken salad!

RECIPE: CHICKEN-STUFFED MATZOH BALLS

Prep time is 30 minutes, and cook time is 30 minutes.
 
Ingredients For 16 Servings

For The Chicken Matzo Balls

  • 4 eggs
  • ¼ cup Colavita Extra Virgin Olive Oil
  • ¼ cup chicken or vegetable broth
  • 1 cup matzo meal
  • ½ teaspoon baking powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground ginger (optional)
  •  
    For The Chicken Meatballs

  • ½ pound ground chicken
  • 2 teaspoons Colavita Extra Virgin Olive Oil
  • 1 egg yolk
  • 1 small shallot, minced
  • 1 garlic clove, grated on a Microplane
  • 2 tablespoons fresh chopped parsley or dill (or both)
  • ½ teaspoon kosher salt
  • Pinch freshly ground black pepper
  •  
    Preparation

    1. MAKE the matzo balls. Stir together the eggs, olive oil, broth, matzo meal, baking powder, salt, and ginger. Place it in the fridge to allow the matzo meal to hydrate.

    2. MAKE the chicken meatballs. Line the baking sheet with parchment paper. Mix together the chicken, olive oil, egg yolk, shallot, garlic, parsley or dill, and salt and pepper.

    3. USE wet hands to gently roll about 1 teaspoon of mix together to form a meatball. Place on the baking sheet and continue with the remaining meat mixture.

    4. SCOOP about 2 teaspoons of matzo ball mix and flatten it with moist hands. Roll the chicken ball inside the matzo mix and then roll them together to seal. Continue with the remaining mix.

    5. BRING a pot of water, with a tight-fitting lid, to a boil. Add the stuffed matzo balls and reduce the heat to a simmer. Cover and simmer for 30 minutes.

    6. TRANSFER the matzo balls to a pan to cool before serving them with your favorite soup or stew. The matzoh ball meatballs can be stored, covered, in the refrigerator for 2 days, or in the freezer for 1 month.

    Mrs. T’s always has great things to do with pierogies. This recipe uses your air fryer.

    Mrs. T’s Pierogies calls this recipe “Margherita Pizza Skewers.” We call it food fun: a snack, a light lunch with a salad, or a side at dinner (just lay the skewer across the plate).

    It’s a take on Margherita pizza on a stick. The recipe:

  • Substitutes the pizza sauce and shredded mozzarella with cherry tomatoes and a bocconcini mozzarella ball.
  • Substitutes a mini pierogi for the pizza crust.
  •  
    Mrs. T’s mini pierogies sit well on a skewer, and you can find many recipes that use them on Mrs. T’s website.

    Pierogies are stuffed pasta pockets, just like Chinese soup wontons and Italian ravioli.

    Mrs. T’s Pierogies calls this recipe “Margherita Pizza Skewers.” We call it food fun: a snack, a light lunch with a salad, or a side at dinner (just lay the skewer across the plate).

    This recipe uses Mrs. T’s mini pierogies, a bite-size __ that sits well on a skewer.

    RECIPE: “MARGHERITA PIZZA” SKEWERS WITH PIEROGIES

    The original recipe used Mrs. T’s Mini Classic Cheddar Pierogies but we chose Mini Classic Onion Pierogies, filled with creamy whipped potatoes and diced onions.

    Prep time is 10 minutes and cook time is 25 minutes.

    Fresh pesto is more flavorful than store-bought, but if you want to save time, you can purchase the pesto.
     
    Ingredients For The Pizza Skewers

  • 1 box (12.8 ounces) Mrs. T’s Mini Classic Cheddar Pierogies
  • 3 cups cherry tomatoes
  • 2 tablespoons olive oil, plus additional for brushing pierogies, divided
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon oregano
  • 1-2 cups mozzarella balls (bocconcini), 18 total
  • Fresh basil leaves
  • Bamboo skewers (10 inches)
  •  
    For The Pesto

  • 2 cups fresh basil
  • 2 garlic cloves, peeled
  • 1/2 cup olive oil
  • 1/4 cup pine nuts
  • 1/4 grated Parmesan cheese
  • Salt, to taste
  • Gound black pepper, to taste
  •  
    Preparation

    1. PREHEAT an air fryer to 400°F.

    2. COOK the tomatoes. In a small bowl, combine cherry tomatoes, olive oil, salt, ground black pepper, and oregano; toss to coat.

    3. TRANSFER the tomatoes to the air fryer tray or basket. Cook in the air fryer for 10 minutes, or until the tomatoes are slightly charred. Remove from the air fryer and set aside.

    4. LAY the pierogies on the same tray or basket. Make sure not to overlap them. Lightly brush each side with olive oil. Cook for about 12 minutes, or until they’re golden brown and crispy. Flip halfway through cooking.

    5. MAKE the pesto. In a food processor, combine the basil, garlic, olive oil, pine nuts, Parmesan cheese, and salt and pepper to taste. Process until smooth.

    6. ASSEMBLE the skewers. Add one pierogi to a bamboo skewer followed by one tomato, one mozzarella ball, and one basil leaf. Repeat with the ingredients until each skewer is filled. Drizzle with pesto.

    Vermouth Spritz Cocktail Recipe For National Vermouth Day

    Unless you drink a glass of straight vermouth, there’s no easier way to celebrate National Vermouth Day than this Vermouth Spritz recipe. (The holiday is also known as World Vermouth Day.)

    A vermouth spritz, you say? But isn’t vermouth used in a Martini?

    The number-one use of white vermouth in the U.S. is in a Martini. For sweet (red) vermouth, it’s the Manhattan.

    In world standings, the Manhattan is the 5th most popular cocktail, and the Dry Martini is the 6th most popular. Here are the Top 10 cocktails.

    Vermouth is a fortified wine that is flavored and aromatized with botanicals. Red vermouth is made from red wine; white vermouth has a base of white wine.

    There are a number of different vermouth styles: sweet and dry, red and white, amaro (with added bitters), chinato with added chinchona (quinine) and often gentian (a root), alla vaniglia with vanilla, and others. Vermouth houses typically make a variety of styles.

    The botanicals include a mix of barks, flowers, herbs, roots, seeds, and spices that are proprietary to each producer.

    RECIPE: VERMOUTH SPRITZ

    For a dry cocktail, use white vermouth; for a sweet one, use red vermouth. If you’re an olive fan, you can use an olive garnish with the dry vermouth.

    If you prefer, you can substitute a grapefruit, lemon, or lime wedge for the orange wedge.

  • 2 ounces dry or sweet vermouth
  • 4 ounces soda water
  • Ice cubes
  • Garnish: orange wedge
