Healthier Potato Recipes & Potato Nutrition For National Tater Day

March 31st is National Tater Day, celebrating all types of potatoes which provide us with essential vitamins, minerals, and fiber.

Potatoes are one of the most versatile and widely eaten foods worldwide. They are typically served as a side dish in the U.S.—baked, boiled, fried, hash-browned, mashed, and roasted.

Potatoes can also be made into soups and salads, tossed into casseroles, and distilled into vodka.

Because they can be cultivated anywhere—from subtropical to freezing climates—and grow well in poor soil, potatoes have gained popularity around the world. One can now find “traditional” potato dishes in every part of the globe.

We know that potatoes are a starch, but are they a vegetable?

Yes! Potatoes are stem tubers, a starchy vegetable, i.e., they contain more starch than other vegetable types).

This means that potatoes have more calories and typically less fiber than green, orange, purple, red, and yellow vegetables (it’s the potato skins that contain the majority of the fiber).

POTATOES ARE HEALTHFUL*

Starch is a type of carbohydrate that our body breaks into glucose to use as energy, and potato starch can improve digestive and colon health [source].

In addition to starch, potatoes contain vitamins, minerals, and fiber. They’re rich in vitamin C, which is an antioxidant.

Another major nutrient in potatoes is potassium, an electrolyte that aids in the workings of the heart, muscles, and nervous system.

While white potatoes are eaten the most, those that come in other colors contain more nutrients that have health benefits.

In general, the darker the potato flesh, the more antioxidants it contains.

  • Sweet potatoes are a good source of vitamin A, an important nutrient for immunity and eye health.
  • Purple potatoes are rich in antioxidants including anthocyanins which may prevent heart disease and cancer and boost brain health.

    Potatoes are less healthy when they’re loaded with animal fats, such as bacon, cheese, and sour cream.

    We learned to use nonfat Greek yogurt instead of piling sour cream on our baked potatoes.

  • When you add scallions or chives, and just a bit of grated Cheddar, you have a lower-calorie loaded baked potato, and you greatly improve the nutrition.
  • Switch the bacon for tempeh bacon, turkey bacon, or even mushrooms sautéed in olive oil.
  • There are also bacon-flavored seasonings. We’re fans of J&D’s bacon salt.

    Perdue Chicken Plus Snackers: A Fun Snack In 3 Flavors

    March is National Frozen Food Month, and before it comes to an end we’d like to introduce you to a new discovery: Perdue® Chicken Plus Snackers in three flavors.

    It’s one of Perdue’s two new product lines, along with Perdue® Flavor-Infused Chicken in three flavors: Greek, Green Chili, and Sesame Ginger. Also frozen, these are a flavorful base for meals, to which you add vegetables and a starch (rice, noodles).

    We’ll review those later, but today it’s about the Snackers.

    PERDUE CHICKEN PLUS SNACKERS

    Like chicken nuggets, these Snackers are finger food. But they come in three great flavors:

  • BBQ
  • Firecracker (pretty hot!)
  • Pizza

    Made with a blend of white meat chicken breast, chickpeas, and cauliflower (you can’t detect the latter two ingredients, added for extra nutrition), each serving contains a quarter cup of veggies/legumes and 9 grams of protein.

    Juicy, tender, and flavorful, in need of no condiments (but of course, you can add them), these bite-sized, pop-able treats are ready in minutes for snacking plus:

  • Appetizer skewers, with cubes of cheese, cherry tomatoes, gherkins, etc.
  • Cocktail picks for Bloody Marys
  • “Croutons” on green salads
  • Taking on the go for a protein-rich bite

    Each Snacker is about the diameter of a quarter but 1/2 inch or higher.

    Ready to heat-and-eat from the freezer in as few as five minutes, they’ve become a family favorite in our house.

    Chicken-Stuffed Matzo Balls Recipe For Passover Or Anytime

    This recipe from Colavita has a new take on matzo balls and chicken soup.

    The matzo (matzoh) balls are stuffed with chicken meatballs!

    Plus, this is a healthier chicken soup. Extra virgin olive oil replaces the chicken fat (schmaltz).

    This recipe is only for the stuffed matzo balls. Use your own favorite chicken soup recipe or our classic Jewish chicken soup. See more chicken soup recipes below.

    Also, you don’t need chicken soup to enjoy these stuffed matzoh balls. You can put them in other soups, stews, atop grains, on a plate as a side, or atop a salad—green salad, even chicken salad!

    RECIPE: CHICKEN-STUFFED MATZOH BALLS

    Prep time is 30 minutes, and cook time is 30 minutes.
     
    Ingredients For 16 Servings

    For The Chicken Matzo Balls

  • 4 eggs
  • ¼ cup Colavita Extra Virgin Olive Oil
  • ¼ cup chicken or vegetable broth
  • 1 cup matzo meal
  • ½ teaspoon baking powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground ginger (optional)
  •  
    For The Chicken Meatballs

  • ½ pound ground chicken
  • 2 teaspoons Colavita Extra Virgin Olive Oil
  • 1 egg yolk
  • 1 small shallot, minced
  • 1 garlic clove, grated on a Microplane
  • 2 tablespoons fresh chopped parsley or dill (or both)
  • ½ teaspoon kosher salt
  • Pinch freshly ground black pepper
  •  
    Preparation

    1. MAKE the matzo balls. Stir together the eggs, olive oil, broth, matzo meal, baking powder, salt, and ginger. Place it in the fridge to allow the matzo meal to hydrate.

    2. MAKE the chicken meatballs. Line the baking sheet with parchment paper. Mix together the chicken, olive oil, egg yolk, shallot, garlic, parsley or dill, and salt and pepper.

    3. USE wet hands to gently roll about 1 teaspoon of mix together to form a meatball. Place on the baking sheet and continue with the remaining meat mixture.

    4. SCOOP about 2 teaspoons of matzo ball mix and flatten it with moist hands. Roll the chicken ball inside the matzo mix and then roll them together to seal. Continue with the remaining mix.

    5. BRING a pot of water, with a tight-fitting lid, to a boil. Add the stuffed matzo balls and reduce the heat to a simmer. Cover and simmer for 30 minutes.

    6. TRANSFER the matzo balls to a pan to cool before serving them with your favorite soup or stew. The matzoh ball meatballs can be stored, covered, in the refrigerator for 2 days, or in the freezer for 1 month.

    Food Fun Recipe: Air Fryer Margherita Pizza Skewers

    Mrs. T’s always has great things to do with pierogies. This recipe uses your air fryer.

    Mrs. T’s Pierogies calls this recipe “Margherita Pizza Skewers.” We call it food fun: a snack, a light lunch with a salad, or a side at dinner (just lay the skewer across the plate).

    It’s a take on Margherita pizza on a stick. The recipe:

  • Substitutes the pizza sauce and shredded mozzarella with cherry tomatoes and a bocconcini mozzarella ball.
  • Substitutes a mini pierogi for the pizza crust.
  •  
    Mrs. T’s mini pierogies sit well on a skewer, and you can find many recipes that use them on Mrs. T’s website.

    Pierogies are stuffed pasta pockets, just like Chinese soup wontons and Italian ravioli.

    Mrs. T’s Pierogies calls this recipe “Margherita Pizza Skewers.” We call it food fun: a snack, a light lunch with a salad, or a side at dinner (just lay the skewer across the plate).

    This recipe uses Mrs. T’s mini pierogies, a bite-size __ that sits well on a skewer.

    RECIPE: “MARGHERITA PIZZA” SKEWERS WITH PIEROGIES

    The original recipe used Mrs. T’s Mini Classic Cheddar Pierogies but we chose Mini Classic Onion Pierogies, filled with creamy whipped potatoes and diced onions.

    Prep time is 10 minutes and cook time is 25 minutes.

    Fresh pesto is more flavorful than store-bought, but if you want to save time, you can purchase the pesto.
     
    Ingredients For The Pizza Skewers

  • 1 box (12.8 ounces) Mrs. T’s Mini Classic Cheddar Pierogies
  • 3 cups cherry tomatoes
  • 2 tablespoons olive oil, plus additional for brushing pierogies, divided
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon oregano
  • 1-2 cups mozzarella balls (bocconcini), 18 total
  • Fresh basil leaves
  • Bamboo skewers (10 inches)
  •  
    For The Pesto

  • 2 cups fresh basil
  • 2 garlic cloves, peeled
  • 1/2 cup olive oil
  • 1/4 cup pine nuts
  • 1/4 grated Parmesan cheese
  • Salt, to taste
  • Gound black pepper, to taste
  •  
    Preparation

    1. PREHEAT an air fryer to 400°F.

    2. COOK the tomatoes. In a small bowl, combine cherry tomatoes, olive oil, salt, ground black pepper, and oregano; toss to coat.

    3. TRANSFER the tomatoes to the air fryer tray or basket. Cook in the air fryer for 10 minutes, or until the tomatoes are slightly charred. Remove from the air fryer and set aside.

    4. LAY the pierogies on the same tray or basket. Make sure not to overlap them. Lightly brush each side with olive oil. Cook for about 12 minutes, or until they’re golden brown and crispy. Flip halfway through cooking.

    5. MAKE the pesto. In a food processor, combine the basil, garlic, olive oil, pine nuts, Parmesan cheese, and salt and pepper to taste. Process until smooth.

    6. ASSEMBLE the skewers. Add one pierogi to a bamboo skewer followed by one tomato, one mozzarella ball, and one basil leaf. Repeat with the ingredients until each skewer is filled. Drizzle with pesto.

    This sophisticated Easter rabbit from Omnom, one of our favorite chocolatiers, is outstanding in two ways.

    First, its sculpted, almost Cubist look is unique and elegant (photo #1).

    Mr. Carrots looks like he could be the pet of Picasso’s Girl With A Mandolin (photo #3).
