RECIPE: PEANUT BUTTER & JELLY POPCORN

Peanut butter and jelly is a classic pairing that never goes out of style.

Here’s a fun recipe for both kids and adults alike.

You can store the PB&J popcorn in an airtight container in the refrigerator for up to 1 week.

Ingredients For 4-6 Servings

  • 8 cups popcorn
  • 2 tablespoons raspberry jam
  • 1/2 cup white chocolate chips
  • 3 tablespoons smooth natural peanut butter
  • 1/4 cup freeze-dried strawberries
  • 1/4 cup dried cranberries
  •
    Preparation

    1. STIR together in a large bowl the popcorn and jam until evenly coated. Transfer to a parchment paper–lined baking sheet.

    2. SET a small heatproof bowl over a small saucepan of barely simmering water (or use a double boiler). Add the white chocolate chips and peanut butter. Cook, stirring occasionally, for 3 to 5 minutes or until smooth and melted.

    3. POUR the peanut butter mixture over the popcorn mixture. Sprinkle with the strawberries and cranberries and toss.

    4. REFRIGERATE for 10 minutes or until the peanut butter mixture is set. Break into pieces to serve.

Crunchy Variation: You can use crunchy peanut butter instead of smooth, or sprinkle with 1/2 cup chopped peanuts in Step 3.
