RECIPE: Baked Potato Stuffed With Leftovers

If you have a few leftover beans, shrimp, veggies or whatever, but not enough for a main course or to toss with pasta, add them to baked potatoes for a different take on the stuffed bake potato.
A layer of cheese or other dairy adds richness, but you can do without it. Here’s all you have to do: 1. BAKE the potato as usual. Slice in half. 2. ADD optional grated cheese or butter plus any other toppings from the list below. 3. WARM in the microwave for 15 seconds or until the cheese melts. Serve immediately. |
