One of the recipes we’ve been spiralizing a lot is this Zucchini Linguine.
It’s easy to make: 4 minutes in the microwave.
It’s low in calories: Two cups of zucchini (a big portion) are 37 calories. A half cup of marinara sauce is 65 calories. Two tablespoons of grated parmesan are 44 calories.
Make or buy the zucchini noodles.
You can use any red sauce.
Basil and capers
Cacio e pepe (grated cheese and black pepper)
Cherry or sundried tomatoes
Pimento and olives (roasted red pepper)
Sautéed seafood (salmon, scallops, shrimp)
Or, use a heart-healthy EVOO-based sauce mixed with:
RECIPE: ZUCCHINI LINGUINE MARINARA
Ingredients For 2 Servings
1/2 cup marinara or sauce of choice
1 pressed garlic clove
1-2 tablespoons grated parmesan cheese
Optional garnish: fresh basil, red pepper flakes
1. PLACE the ingredients into a microwave-safe dish: zucchini, sauce, pressed garlic.
2. MICROWAVE, covered, on HIGH for 4 minutes.
3. REMOVE from the microwave, stir and garnish as desired.
4. OPEN a bag of salad and enjoy your easy, low-calorie dinner.
